Even as a US citizen at AMS, my passport is scanned at AMS passport control less than 25% of the times I have entered or exited the Schengen zone there. And my EU passport using travel party members? Lower than 25%. YMMV, but the general situation (of cursory checks) has lead to intelligence and law enforcement investigative frustration for years even in relation to just AMS, where the government does jump to the tune of a US fiddle in many ways.
How bad is AMS compared to other major Schengen gateways?

I know that many of my non-EU family members with visa-free entry to Schengen have been waved through CDG, MAD and Italian airports without even opening their passport; I've walked into Spain from Gibraltar without showing any sort of document much less opening it.
