If you only have 8 days, I definitely would limit to two islands... probably Maui and the Big Island.
The Big Island Hilton is an amazing place... actually built with keeping you on-site... you do not have to leave. BUT DO! Do know, that many of the "things to do" on the Big Island are on the eastern side of the island... so you will have major daily commutes from HHV.
