Instead, I would recommend Maui (OGG) and a side trip to Lanai. You can travel on 10/18 (I know, not your preferred date) on UA 570 IAH-SFO to UA1212 SFO-OGG on the outbound. Saver First is available on UA1212. You'll be waitlisted for UA570, but the front cabin is currently wide open.

Once you get to OGG, stay in Kaanapali. If you have the time, I highly recommend taking the ferry out of Lahaina to Lanai and stay at the Four Seasons Lodge at Koele for a couple of nights to see a totally different type of Hawaiian experience.

That one-way flight itinerary will cost you 80k in miles plus $10. Plus you'll have time to stretch your legs in SFO between these two flights.

I also see a couple of mixed cabin options in Saver First for the return OGG-LAX-EWR on 10/31. Both have availability in First for LAX-EWR, but the cabins for both OGG-LAX flights look wide open although Saver First are currently not available. Again, you could waitlist for Saver First for those legs.

And as someone who has been to most of the Mexican beach resorts on both sides of the country, I wouldn't go to PV if I was going to Mexico. I would instead recommend Cuzumel, Ixtapa/Zihuatenejo, or Manzanillo over PV any day of the week...
