What I often do is confirm the terms of the offer (especially if there are several similar versions of an offer) with the agent when calling to activate the card. Often, during the activation call, you won't even need to ask - they will review for you the terms for getting the bonus.
On my Executive AA card and my wife's AA Platinum card Citi has both times included a letter outlining the bonus points and spend required, so there's no need to verify if you have it in writing in front of you.
