Yes, you can. T-Mo's Simple Choice plan has no contract. Select the BYOD (Bring Your Own Device) option & order the correct (nano, if I'm not mistaken - not iPhone user, sorry) Sim card. Online, I believe it's free including UPS ground shipping (2-4 days) - prices in retail store might vary or not free (max @ $10 but you might get it free.) Since your plan is to drop it after end of Euro trip, I suggest getting a new number to use temporary instead of porting your VZW mobile # over (as risk ETF with Big Red, unless you are out of contract - unlikely, right)
Check to make sure that you can edit & save new/different APN settings under T-Mo, device should be unlocked for oversea usage but might still be blocked for domestic out-of-network use on AT&T and T-Mo USA.
On Android devices, we have a workaround on tethering block but beware that overseas, your speed will be lowered & some reporting on 2G/Edge speed and not necessary 3G/HSPA, depending on country & partner carrier's coverage/band availability, etc.
