Looks like there are some good rates at the new Doubletree. Have stayed a few times at the Hilton Dubai Creek and really like the hotel, but tend to think that the Doubletree Al Barsha looks in a good location beside the Mall of the Emirates, where you could walk to many restaurants. From the Dubai Creek Hilton, you have the river and have to walk some distance or get taxis to the Malls or restaurants. As you don't appear to want one of the beach hotels, I personally would try the new Doubletree. Not sure about the pool at the new Doubletree, but the roof top pool at the Hilton Dubai Creek does have great views, but is quite small and we found the sunbeds got snapped up quite quickly, early in the morning.
