If he doesn't need a visa, then it should be simple. DXB is pretty quiet at that time, and he should be through immigration in less than 30 minutes. Get a taxi anywhere for something to eat/drink, and head back to the airport about 1am.

I'd recommend Le Meridien Village. Opposite the airport, with loads of bars and restaurants. There will be loss of taxis available at 1am.
