As someone who's been dozens of times, with a week you have lots of options:

3 days/2 nights side trip to Victoria Falls. Much more fun if you're adventurous and like bungee, whitewater rafting in addition to gorgeous nature.

Cape Town. Enough said. Easy side trip of 3-4 days. Again, I'd rent a car. Get down to Simons and see the penguins. Maybe head along the coast to Gordons Bay, Bettys Bay, etc.

Or, if you want a scenic drive, I highly recommend Lesotho. Maybe 3 days/2 nights roundtrip from Josie. Some amazing nature lodges.
