I would say the catering would be the same menu (although with new/fresh meals and trays) and the crew would just swap the services around to match the time, ie breakfast after takeoff, lets call it brunch, and dinner before arrival. One of QF's LAX-SYD flights used to be a day flight with similar departure times to this rescheduled one and that's what the service was from memory.
