I checked every available flight from IAH to connecting cities between 10/18-10-23 and nothing in the Saver F award cabin.

You can upgrade on-line immediately after ticketing, or at any time thereafter so long as there is R space available.
I just looked at 10/18, and the 764 out of SFO is R7, so that segment you could confirm right now. The connector IAH-SFO would be waitlisted (a very common situation for domestic connections these days). On 10/20, the nonstop 772 IAH-HNL is R6. That's a slightly less desirable aircraft than the 764, but still a cut above regular domestic F. I didn't look closely at other days or flights.
