On transcon flights (similar for mainland-HNL) - I sometimes wondered how FA can "disappear" for 1 or 2 hours, even when it's a red-eye eastbound on a narrow-body like the 738's (i.e. on a recent DL LAX-JFK run) It's not like that they have their crew rest quarters above or below - walk to the back & the gallery is basically locked up, closed. Just plain self-service cups for water & juice. Another time, the curtains were drawn shut in front of the gallery - took a minute or two for 1 of the 2 FA to appear when someone a few rows in front of us rang the call button. Those on AA seemed to be better on this route, with 1 of them taking turns coming around with the tray, offering cups of water after they put away the cart.
Flying non-US carrier on TPAC runs, we have no problems whatsoever with services in Y.
