As far as earning for IHG Rewards, then indeed all nights can be treated as a single stay, but that does not impact on the contract entered into as far as the stay goes

Depending on the booking terms , it can be worse value; e.g. if cancellation is 4pm day before arrival, then if deciding to check out early one morning, may be hit for an extra night rather than simply an early departure fee.
Spot on and assuming you have made say four reservations you will of course have four reservation numbers and confirmation emails to back this up.
