Reservations are separate from loyalty schemes.
The fact that for loyalty scheme purposes, IHG count contiguous nights of separate reservations/bookings as "One Stay" does not change the fact you have eg 5x seperate legally binding reservations that will each be treated as seperate.
Not withstanding cheaper weekend rates, I often book separate first/last nights of bookings in case I need to arrive a day later or leave a day earlier. I would only split a stay further if doing so made a financial saving on the booking.
