On the rare cases I stay at hotels which have an early departure fee but have a sameday cancellation policy ( rather than cancel day before or worse) , rather than book 5 nights, I simply would make 5 bookings of 1 night and avoid the fee
I'm pretty sure the hotel is allowed to treat that as one booking according to the T&C, unless you book different rates between the nights.
