So would they be able to give me my boarding passes for LAX-YYZ, YYZ-LHR and LHR-DXB and would I be able to show those BPs at the AC to access the lounge?

You should be good on all fronts. Your flights do not need to be on the same PNR to qualify for the OW baggage/ checkin as well as lounge access benefits, as long as you meet the travel date requirements. I often have separate PNRs for US to Europe and then intra-Europe flights (because it's cheaper ), and have never had any issues..
