787 is a nice aircraft, and it's still new enough to avoid some of the maintenance/cleaning issues on older aircraft. The safety issues haven't troubled me at all. I also find EWR a decent airport (well, the lounge and staff are good).
On the noise front - it is certainly much quieter but that tends to mean that other noises are not masked. It's relatively easy to filter out a constant drone, but when that's missing you do notice snoring/coughing/talking/clanking/footfalls much more.
I had the 'pleasure' of seeing a man rant to CC about their 'stomping up and down all night in their high heels' on my recent 787. The patient lady pointed out that it was unlikely to be crew as they are forbidden to wear heels in flight. But although I cannot agree at all with his manner, he did have a bit of a point.
I guess it's a question of being careful what you wish for.
