Seething Lane is an excellent name
It's handy for the Tower and Tower Bridge, and not too bad for Bankside, but otherwise it's solidly a business area. Not that it's necessarily a problem, as you're pretty well placed for the Tube and the river boats. But don't underestimate how quiet this area is at weekends - you will see a majority of businesses (even pubs and restaurants) closed on Saturday and Sunday - less so as you approach the tourist sites.
I thought so as well- I have worked in this area and seem to recall it gets super quiet.
My parents like the idea of walking- they are huge walkers- I will remind them just how quiet it can be on the weekend- however they are not too far away from some interesting areas on foot or by tube and they don't really like to go out at night that much anyway (no 75 year old clabbers
).

I do agree Seething Lane is a great address- I used to live on "Via Ex Convento" which looked really great on post addresses I thought.
