Having taken our kids on Carnival and Royal Caribbean, there is practically no difference between the 2 from a "family-friendly" perspective. Both have great kids programs and areas for the kids to go. Carnival also has a wide range of long weekend cruises that do attract more of a party crowd, but that is hardly the norm with that line anymore.
