The unfortunate thing is if you are stuck on an island somewhere you can be pretty limited in your choices. It's not just a Hilton thing, I've had similar experiences at Marriott resorts as well. Some of the St. Regis's have wonderful dining...but some of them are pretty meh. The same is true of the best all-inclusives in the world. Some are pretty good. If you read any Anthony Bourdain, he makes it clear that "institutional" cooking is not where the action is for chefs. He makes it clear it's a safe but bland choice to go into country clubs or hotel catering...
