Did you bother to click the link? I think his point was there are good restaurants at Hilton hotels. An Embassy Suites may not be in the class of the others or in their location, but Luke is a John Besh restaurant.

However I understand what the OP is saying and I find hotel food, in general, to be pretty bland since they tend to do a lot of catering and cook for a number of different palettes they encounter.

The unfortunate thing is if you are stuck on an island somewhere you can be pretty limited in your choices. It's not just a Hilton thing, I've had similar experiences at Marriott resorts as well. Some of the St. Regis's have wonderful dining...but some of them are pretty meh. The same is true of the best all-inclusives in the world. Some are pretty good. Most aren't terribly exciting from a culinary perspective.

The crappy thing at all of the resorts the OP was at is that they are incredibly expensive to dine in and you'd expect a better culinary experience, but based on what I've read that doesn't seem to be the case. If I was at a Waldorf and had a bad meal I'd be pretty surprised, but out in the middle of the ocean where everything is flown/boated in, I wouldn't be too shocked.
