But when you can take that same floorspace and put in an overpriced coffee shop, in an hour you can churn 200 customers at $8 ($1600) vs. 20 customers at $15 ($300).

Lounges create loyalty and high priced business seat sales, so they are more of a loss leader to get you to buy a ticket on that airline.
