For what it's worth, I'm traveling to Tokyo in March and was hoping to eat at Sushi Saito (3* I believe). I emailed the concierge at the Park Hyatt and asked them to call on February 1, as Saito opens up reservations on the 1st of every month for the following two months.
Concierge called on the 1st and had no luck getting a seat. So it looks like Sushi Saito is pretty difficult to get.
Thanks, I know that most of these places require at least several months advance, however I'd like to know if it's 3 months or 7 months, etc. I really don't want to get stuck like you did and miss out.
