Taking 2 connections instead of 1 and meeting up in Germany is an option, though tight connections may mean that bags won't make it to Istanbul.
I am puzzled by their intransigence on this issue... Air Canada is a big company and I provided them with an alternative itinerary that closely matches what we had before on UA and LH combo. But they refused. Am I really to believe that they can't accommodate us? It's just that they do not want to do it. After talking to them on the phone I felt like they trained at a DMV before they got their current job at the customer service. Oh, and by the way, their number is busy most times I tried calling.
You haven't said what you actually asked them for. Also not sure where Air Canada falls in the equation of what you've called a UA/LH combo; if there's no AC flight don't know what they might have changed. Did you just buy a UA and LH flight as codes shares from AC or is there an AC flight in there somewhere.
If it is actually an Air Canada flight schedule out of ORD they should be willing to accommodate you on a UA flight at a different time on that day and would be surprised if they didn't accommodate a reasonable request, but if you're using the schedule change to ask them to create a radically different itinerary on a non-partnered carrier then you're request may not be reasonable.
You also talk about a tight connection option, so also sounds like they're offering you something.
