The biggest gripe I have about the SkyClub (specifically for JFK) is the Coffee and Hot water are out in the open. But the Tea is held capture by the bar tender like they are freak'n gold doubloons. They put it in a fancy looking box, but it's actually $3 tea I could get from any Walgreens.
I would never have anything other than snacks during a layover at the SkyClub. On the 10pm MSP-LHR I would never want to eat at the Sky Club for pre-departure meals. Heck, I doubt it's worth my just to stop in for a drink.
Fact is the food at the gate is actually quite good at MSP. OTG (which did the JFK remodels) did the MSP remodeled food and bev for International gates.
The food and drinks are actually pretty respectable. One of the Chefs in the MSP operation (the noodle shop) was on Top Chef this season and made it to round 2/3 though the show. Andrew Zimmern helped develop the bar and some of the other restaurants that serve the gates. Select what I want on the iPad, swipe the card, done. Beyond that there are a slew of local restaurants which are a step above the typical Chili's.
The fact is the public food and beverage at most international airports isn't what it was 15-20 years ago. It's stepped up while the clubs have let things things slide.
