You will need to go through immigration in Paris, but you do not need to retrieve your checked luggage. Your connection is tight, but legal. If you miss the flight to Rome, the airline involve will rebook you automatically for the next flight. You'll be arriving from MSP in the morning, and there are numerous daily flights between CDG and Rome.
You are right, but I personally would still book the later connection. On average there are flights every 90 - 120 minutes on this route. If the MSP flight is on time, you still have to hustle to make the connection, and not everyone is up for this after a long journey. I'd rather just book myself on the next flight and not even try to make the tight connection. But that's me. You are right, though, AF will rebook you on the next available flight out, assuming that this segment is part of a single journey. If flights are very booked you could end up leaving hours later, but I have found that AF intra-Europe flights are generally not overbooked.
