Same idea as trying for multiple "stays" at a Marriott or SPG - if it's on concurrent nights, they tend to roll them together into a single stay. Some people have reported success talking to the front desk, and asking them to fully close out each night on a separate payment method, under the guise of needing to split corporate/contractor/personal expenses (at SPG/Marriott... never tried at Fairmont)
