I stayed at the Ibis Hong Kong Central and Sheung Wan last weekend. As previously mentioned by
drzoidberg, it was very convenient to the airport. I ended up taking the A11 bus from the airport to the hotel and vice versa.
From the airport to the hotel: get off at stop 4, Macau Ferry and Connaught Road Central. After getting off, you'll want to cross Connaught Road and walk a couple blocks back in the direction the bus came. Then, you'll reach Des Voeux Road, where you'll make a left. The hotel is on the left after you cross Bonham Strand Road.

From the hotel to the airport, walk over to the intersection of Queen Street and Connaught Road West. See Page 1 of the above link for the timetable.
Each way costs $40HKD and 35 minutes of your time. There's a kiosk at the airport bus terminal if you do not have exact change (meaning that your only local cash is that which you just got out of the ATM) and need to buy a ticket. Recommend having the exact change for the return, however.
My impressions of the hotel: Decent sized room; reasonably comfortable. Wi-fi worked pretty well. Walkable to the Sheung Wan MTR station or to the International Finance Center, where there's a mall (note, too, that the famous Tim Ho Wan dim-sum restaurant is located in this mall on the level below the Airport Express check-in counters). The IFC mall is not far from the ferries, if you should wish to take one to Kowloon or one of the outlying islands.
Hotel breakfast was overpriced and underwhelming; not a very good selection. You can get muesli, a pastry, and coffee at the hotel Starbucks on the ground floor together for about half the price of the hotel breakfast. You can even use your U.S.-based Starbucks Card and get stars toward free drinks, etc.
Elevators in the hotel are slightly confusing. Only three of the five go all the way down to the ground level; the other two will only take you to the hotel lobby on the fifth floor. Thus, you may find yourself having to wait yet again for a second elevator to get you to the ground.
