There seem to be 2 forms of book the cook.
One focuses on the standard meals (like AA domestic J and F) and is really designed to get the option ratios (i.e. The mix of chicken to beef) more closely aligned to passenger demand. So a last minute passenger would still have the normal choice.
The other supplements the menu with a wider range of options. Clearly you need to pre-order to get these otherwise you just get standard fare onboard.
