Studio B at the M Resort used to be one of the best in town, but just like almost every other buffet, I feel like it's gone downhill a ton in the last year or so. Some of my friends go to the buffet as a 'last stop' on their way back to CA and I usually join them so I've gone multiple times over the last few years, but even they've become disenchanted with it. The worst aspect is lack of consistency; one day a certain dish will be great but on the next visit it's absolutely awful. Also, the last two times I went, they had huge lines but tons of empty tables / uncleared tables once we got inside.

The new Aria is nice - I've gone twice since the renovation and like the updated decor and the food variety, and the food quality is pretty good. My big problem with Aria is that on both visits, the service was absolutely awful - not just from the busser at the dining tables, but also from the people manning the food stations. If not for the horrid service (and maybe I just have to chalk it up to n=2), Aria's probably a top tier buffet.

Bellagio buffet is obviously a shadow of its former self (especially comparing to pre-MGM!), but I've found the food quality to be consistent so it's still one of my favorites. Being able to sit at the bar is a huge plus too.

Hadn't heard that Wicked Spoon was trending down. I'll have to check it out. A real shame if it has - I visited last summer and thought it was easily a top tier buffet, although pricy as mentioned.
