Another vote for AMS here. If you have a long (or even long-ish) layover, there's a lot to see and places to eat. I have no idea what's in CDG because my experience has always been get off one airplane, run, stand in security, take a bus, run, and then get on the next airplane. It doesn't matter how long the layover; I've had the same experience every time.
