I've never flown UA from DXB-IAD but have flown them twice INTO DXB from IAD. As a Dubai resident, I have an E gate pass so immigration isn't an issue but if OP wants to maximize his time in Dubai he should go online & reserve the Marhaba VIP arrival service (free for F passengers on every airline except UA) . They will pick OP up at gate and walk him thru immigration (much quicker then fast track) and take him all the way to car. With no luggage OP should be on street 15 min after landing

I think is about AED300 (around $80.00 and WELL WORTH EVERY PENNY

Le Meridian might be much easier for such a short layover. I assume you must depart terminal to meet wife & check into MLE flight together? If not I would suggest you stay in terminal & use the hotel on level 3 (both terminals have one). It's a great 4* hotel if you want to maximize rest time between flights & not have to deal with customs, immigration. But if you must meet wife in Dubai, I'd go with the Le Meridian. It's a nice hotel & very close to airport
