No. You can't rely on 72-hour TWOV in that scenario. You can snag 72 hours if you cut out CAN (i.e. fly nonstop to PEK from IST). Alternatively, you could theoretically stick with the CAN routing if you pop up to PEK that same day and on over to ULN the next morning (provided your total scheduled ground time is less than 24 hours).
