I don't think quickly passing through immigrations & customs is an issue for the OP. I believe the earliest one can check-in at DXB for a UA flight is 3 or 4 hours so 9pm at the earliest. Lots of time between 5-9pm. There's a small food court upstairs but it is terrible compared to the places once through customs.
