Travel tips: Portland (OR), Irvine, San Diego

We are taking a train trip this spring and would appreciate tips regarding services and transportation for the following:

Portland, OR: We have a few hour layover between the Westbound Empire Builder and Southbound Coast Starlight. As sleeper passengers, I believe we have access to the lounge in Portland. Are there suggested things to do in the area during our layover? I assume we can leave our baggage in the lounge.

Irvine: We arrive in Irvine at 11:00pm and will need a taxi to Marriott Newport Coast villas. Are there usually taxis in the area or does anyone have suggestions for a taxi company to call?

Irvine to San Diego : We plan a day trip during the week in order to keep our Amtrak accounts active. Does the Irvine station have available parking and is the area safe to leave a car?

Which station do you recommend in San Diego and what are suggested activities in the area?
