You are allowed to buy a 3rd seat if you like (and they will sell it to you).
I have sat in rows 2-4 and do not remember seeing any issues with the windows. I suspect in the older planes that did not originally come with the EMS seats they may have had issues with windows as they needed to move seats back to create the extra space (you can see it in the E-190 ems seats ).
Here is another interesting thing about seating I found out .
A320 aircraft, N784JB and higher, come equipped with an airbag seatbelt for each seat in rows 1-5 and 10-12. The airbag is designed to inflate towards the center of the customer providing maximum protection against injuries that may occur in high g-force events. Please note: seatbelt extensions will deactivate the airbag seat belts.
