I would just pay for the 2 tickets, usually Florida is usually cheap (~$350) and a poor use of 25,000 points, more so when you factor in that you will fly AC, and as such with aeroplan you will need to pay taxes so the actual money you save for your 25,000 points would be very very small.

As an example taxes for YYZ -> MCO Direct on AC (rouge.. eugh!) w/ Aeroplan are $178.61, united is $111. The actual money you would save on this ticket would be somewhere around $200-$275 for 25,000 points. At this rate of return you would be better off with the gift cards
