After you pick up luggage and clear customs, theres a bag recheck section, I can't remember in LAX but some US airports have desks there with agents at them, if so you could do it there. If not you'd have to exit departures with your luggage and go to checkin.

Is the ticket you could just see if you can pay a change fee on the ticket for a route change direct to LAS also?
