Give your lack of time, I would focus the hotel choice around what you really want to do. The Ritz is a bit inconvenient in my book and the GH isn't much better, stuck down by the convention centre.

The Island Shangri-La might fit the bill - the Peak Tram is a couple of minutes walk out the back and the trams stop out the front. They also have a 2 star Michelin Chinese restaurant in house. There's also a Marriott and a Conrad in the same complex but I think the Shangri-La is top of the pile.

I would however put the star ferry above the peak tram, especially if the visibility isn't good, in which case the MO might be your best bet.
