Thanks everyone for the very helpful suggestions and tips!
My review of the Ibis Central & Sheung Wan.
I picked the Ibis due to its age (approximately one year old) and price (~$120/day) and proximity to the Sheung Wan MTR station. I booked a City View Twin room and was upgraded to the Harbor View Twin room and also given late checkout until 6pm.
Location: It's still a bit of a ~ 10 minute hike to the Sheung Wan MTR station, but it's right next to a tram station which charges just 2.30 HKD per ride. The A11 bus drops passengers off at the Macau Ferry Terminal/Connaught Road W, which can be crossed by taking a covered pedestrian walkway (requires hauling your luggage up some steps though). The A11 bus can be boarded by walking one block from the hotel to the stop along Queen St- the stop is underneath an overpass. At 40 HKD, the A11 bus to/from the airport can't be beat.
Rooms: The rooms were fairly small, but the harbor view was excellent. Furniture seemed Ikea-like, although I liked the light colored paint/wood. Also, the mattresses were some of the best I've slept in, and this includes my own bed! I inquired about the mattresses, and they are Simmons Maxipedic (Serial No 2012.03). The water pressure in the showers was also very good. Lastly the WiFi signal, even on the 30th floor, was very fast and very strong (~ 65 Mbps). Thoughtful of housekeeping to provide plug adapters as well for guests from the USA.
No Executive Lounge and Platinum members are not given complimentary free breakfast. Fortunately, no one should starve in HK when food is so cheap.
Conclusion: Excellent hotel for the price and A11 bus convenience to the airport.
