For the sleeper, is it possible for one person to purchase 2 of the bargain berth tickets, so as to keep the cabin to myself?

That site describes that they release a limited batch of tickets.
Re Ryanair - pay extra for a hold bag (like other LCCs); make sure your cabin baggage fits the size and weight limits; make sure you print your boarding pass, and print it again and put it in another pocket/bag in case you mislay the first; turn up in good time. Dublin to Glasgow isn't a long flight.

(Ryanair cabin baggage rules - "One cabin bag per passenger weighing up to 10kg with maximum dimensions of 55cm x 40cm x 20cm, plus 1 small bag up to 35 x 20 x 20 cms" - the small bag is a new allowance.)

Re the bargain berths - no, pretty sure it isn't possible to do what you're asking. Note that if the train isn't busy you'd likely get a cabin to yourself anyway.
