Off the top of my head,

For ramen, I will recommend Keisuki Tonkotsu King at Orchid Hotel.

For teppanyaki, I will recommend Keyaki at Pan Pacific Singapore

Is there any particular Japanese item you are looking for, other than non sushi? Unfortunately, a lot of Japanese food in Singapore centers around sushi, but if you can give us an idea of what you have in mind, then we can better recommend.
