I did this a couple of years back. 8 hours is plenty of time ... just don't get distracted

Two things spring to mind ...

1. there's lots of good advice over on the Hong Kong forum
2. scrabbling around to find change for the ferry in the evening. I recall having to buy a coffee or something to get coins for the ticket machine. Maybe this is just an evening thing ? This was at the IFC terminal.
