Just small stamps. They're very good in HK at finding other Chinese immigration stamps and fitting theirs on the same page, no matter how little space there is.
If you've never been to HK before, I'd probably also recommend taking the MTR a couple of stops up to Mong Kok for the full on HK experience (Central really isn't 'real' HK). Just hope you're not claustrophobic.
