To answer these two questions:
1. My experience of check-in at CTU is that they understand how to tag bags through. Ask directly and then check the tag when they fasten it n the bag. This should be no problem.
2. Hong Kong immigration no longer stamps UK passports. They give you a slip of paper to lodge in your passport
Suggestions for HK are spot on. You have plenty of time. Don't miss the Star Ferry.
