Roast duck is a Beijing/North thing. Shanghai/South has good what-is-called salt-water ducks... Basically ducks cured/cooked in salt. A very simple yet surprisingly enjoyable taste.

If you go to Beijing, check out the restaurant called Da Dong. They make great ducks along with traditional as well as modern Chinese cuisine.
