It does depend on the aircraft but also on the route and the number of club passengers - the latter on a SH.
For example a Jersey on the 737 will always have 5 crew and therefore no jump seats unused (except flight deck jump seats) whereas a Pisa could have 3 or 4 crew dependant on club load.
