The considerations are quality of service by flight attendant, quality of food, presence of private horizontal flat bed (as is the case for AC), quality of the lounge, quality of customer service (at the airport, perhaps on the phone), absence of fuel surcharge (which is the case for UA, LX; I am not sure about SN) etc.
So the options include AC, UA, LX, OS, LH, SN, and TK.
US will not be a member of Star Alliance in March.
SK and LOT are not options right now - too much of a detour from my destinations.
If you don't want to fly TK then IMO they rank as follows:
OS>LX>AC>UA>LH>SN
Having said that, if you could mix carriers then I would book the more direct options: YOW-EWR-DXB (UA) IST-YYZ-YOW (AC). If not, then I would definitely go for OS now that they have their new seats. Food is incredible and service is great too!
