The flight was "already" delayed by more than an hour, and in that situation there was already no guarantee that that gate/slot would be available when the flight reaches SEA. I've seen flights been delayed by much more than 1.5 hours at SEA. As if all UA flights have 100% on-time record? A simple customer friendly gesture would've gone a long way. But then, if it were you in that flight and have had nothing to eat for hours, you would be speaking differently..
