It is possible on BA.com, I use it regularly, and you can use any available London airport to stop over at and depart from. I have done
AMS- Lcy (Break) lgw- Edi
AMS - lgw. (Break) LHR- Abz
Txl- LHR (Break) LHR - Abz

It is more restrictive using avios.com - not been possible to swop between the 3 London airports and not being able to break the journey....
