Yes, you can switch it half-way through. Depending on the airlines involved there can be issues switching en route (i.e. A-B-C all on the same "day" and trying to credit A-B to one carrier and B-C to another). But once you stop for more than 24 hours it shouldn't be a problem to change it for the future segments.
